Garden Vegetable & White Bean Soup
A hearty, mineral-rich soup made with simple garden ingredients.
Serves: 4–6
Time: 35 minutes
Ingredients

1 tbsp olive oil
-
1 small onion, diced
-
3 cloves garlic, minced
-
2 carrots, sliced
-
2 celery stalks, chopped
-
1 zucchini, chopped
-
1 cup green beans (fresh or frozen)

1 can white beans, drained & rinsed

1 can diced tomatoes
-
5 cups vegetable broth
-
1 tsp dried oregano
-
1 tsp dried basil
-
salt & pepper to taste

handful fresh parsley (optional)
Instructions

Heat olive oil in a large pot over medium heat.

Sauté onion for 3–4 minutes until softened.

Add garlic, carrots, and celery. Cook 3 minutes.

Stir in zucchini, green beans, tomatoes, white beans, broth, and herbs.

Bring to a gentle boil, then reduce heat and simmer 20 minutes.

Season with salt and pepper.

Top with fresh parsley before serving.
